This page showcases various vegan recipe ideas for healthy food inspiration that I have made for myself, friends and family recently. My hope is that these delicious, plant-based recipes encourage you to try them out for yourself – full recipes with ingredients and cooking instructions can be found on my instagram page: @vegoutlook.

In addition to my recipe creation and photography, some other elements I would like to showcase as part of my portfolio are the recent graphic designs I have created for my job (working for Trupo Treats), as well as a few articles I have written regarding local businesses in the Gainesville area. I am including these to show that I am a well-rounded individual with talent and passion for graphic design, writing, recipe creation, photography and social media. I also believe this section of my website will give more insight into who I am as a person and will allow whoever is reading this to feel more connected to me and the message I hope share with you all.

Vegan Tofu Scramble:

This dish was prepared using extra firm tofu, sautéed vegetables including wild mushrooms, orange bell pepper, heirloom cherry tomatoes, spinach, yellow onion and scallions. For the seasonings, I used vegan parmesan, vegan butter, lemon juice, turmeric, garlic, garlic salt, onion powder, and black pepper. Sauté all together, breaking the tofu up into crumbles with your hands, and serve with a slice of toast cut into triangles.

Strawberry & Banana “Ice cream” Smoothie Bowl:

To achieve an ice-cream-like consistency for the base of your bowl, blend together frozen strawberries and bananas and add just enough liquid so that it is able to blend, but still remains thick. This bowl is topped with sliced strawberries, natural peanut butter, cacao nibs, mini dark chocolate chips, granola, dry roasted peanuts, pecans, chia seeds and hemp seeds.

Vegan Crispy Orange Chick’n:

For this dish, I used Gardein’s brand of frozen Mandarin Orange Crispy Chick’n. I paired it with sautéed mixed vegetables which included red and orange bell peppers, curly kale, snow peas, red onion and mushrooms. All served over jasmine rice and garnished with chopped green onions. Chopped peanuts and cilantro are great topping options for this dish as well.

Asian-Inspired Tofu Buddha Bowl:

This colorful bowl is topped with soy-glazed tofu, sautéed baby portobello mushrooms and edamame, roasted green beans and cherry tomatoes and sliced cucumber. All of this is served over a bed of spring mix and jasmine rice and garnished with everything bagel seasoning.

Banana Bread Muffins with Coffee Cake Crumb Topping:

These moist muffins are filled with chopped pecans and chocolate chips. Top with powdered sugar and serve with sliced mangoes and fresh strawberries.

Aesthetic Fruit Platter:

For this fruit platter, I used sun-glow melon, mango, mandarin orange, kiwi, raspberry and mint leaves. While this technically isn’t a “recipe,” I tried to take this platter to the next level by cutting and arranging the fruit in an artistic/creative manner. That being said, I believe the fruit speaks for itself and made for an incredibly beautiful and equally delicious meal.

Thai Vegetable Fried Rice:

This dish is cooked up with day-old jasmine rice, Just Egg, orange bell pepper, mushrooms and onions. It is seasoned with chili garlic sauce, soy sauce, vegan butter, black pepper, garlic, onion, and ginger powder. Finally, it is topped with sliced avocado, lime, green onions and everything bagel seasoning.

Vegan Feta Penne Pasta:

Creamy, flavorful and restaurant quality, this dish features a pasta sauce with cherry tomatoes, garlic cloves, vegan feta cheese, red pepper flakes, olive oil, oregano and nutritional yeast. Topping it with fresh basil is highly recommended for maximum yumminess.

Vegetable Pad Thai with Crispy Tofu:

The items you’ll need if you want to recreate this masterpiece are rice noodles, bean sprouts, tofu, green onions, ginger powder, soy sauce, lime juice, maple syrup and sesame oil. This dish is most enjoyable when garnished with more green onions, cilantro, crushed peanuts, sriracha and, of course, everything bagel seasoning.

Trupo Treats & Eat Snacklins Giveaway Graphic:

This is a graphic I created for a giveaway between the company I work for (Trupo Treats) and Eat Snacklins, which is the company we were partnering with on the giveaway. This graphic was posted on both company’s Instagram accounts, which share over 32.1 thousand followers across both platforms. I designed this graphic with both company’s images and overall brand aesthetic in mind to be sure that it fit well/flowed with both of their Instagram pages. This graphic also accumulated almost 1,200 comments from followers of both brands and preformed significantly better than both of their recent posts at the time.

Denver Vegan Giveaway Graphic:

This is a graphic I designed for a giveaway I single-handedly coordinated between 5 vegan brands: Trupo Treats, Happy Leaf Kombucha, Nu Foods, Crummies Co. and Peaceful Rebel. This graphic was also posted on all 5 company Instagram accounts, which totaled over 30 thousand followers among all of them and reached even more people.

Childhood Favorites Giveaway Graphic:

This is the first graphic I designed for a giveaway I coordinated between Upton’s Naturals and Trupo Treats. This graphic was posted on both company’s Instagrams, which shared a total of over 61 thousand followers. This post performed better than most of the company’s previous posts and accumulated 3,114 comments between both Instagram pages.
